The summer is the time of the year in which white wine is consumed more, due to its refreshing effect, to its smaller average graduation and its suitable pairing with most plates of fish and seafood that are tasted next to the sea.
In addition, it is indeed in the coast where the main producers of white wine, the Denominations of Origin of Penedés, Rias Baixas and Rueda, concentrate more than half of its supply. Secondly, it stands out the consumption of wines of Rioja, as well as the taste by the autochthonous wines. Thus, the Txakolí is the preferred companion of "pinchos" in Bilbao, whereas in the Valencia Community they prefer to taste the paella accompanied by a wine of the Denomination of Origin of Alicante.
This pattern of consumption favours that each zone counts with "star" wines. In this sense, in Barcelona, the Denominations of Origin of Penedés, Rias Baixas, Rueda, Catalonia and Rioja compose 75% of the supply of white wine in the restaurants.
A different situation to the one lived in the hospitality industry in Cantabria, since in the coasts of the Basque Country, Asturias and Cantabria the leadership of wines of the Denomination of Origin of Rias Baixas prevails, followed by Rueda, Rioja and Penedés. In fact these four added to the Txakolí of Guetaria include the three fourth parts of the supply of white wine.

Nevertheless, in the coasts of Levante, the five Denominations of Origin with white wines that most frequently are in the restaurants are Rueda, Rias Baixas, Penedés, Alicante and Rioja.
However, in addition to the tastes of consumers, they also defer the amounts that the clients are determined to pay for their favourite wines throughout the Spanish coasts. That is at least one of the main conclusions of a study made by the Vinnova consultancy in more than 1,000 restaurants of Mediterranean and Cantabrian beaches.
The research reveals that, like general norm, the price of wine is increased as its consumption moves away from the place of elaboration of the product. Thus, a client in Barcelona would pay for a bottle of the Denomination of Origin Rueda three euros more, than if consumed it in Cantabria.
The situation is repeated when Albariño, from the Denomination of Origin of Rias Baixas, is consumed in Valencia or Barcelona, where people would pay 2.7 euros more for the same product than in a restaurant in Asturias, Santander or Bilbao.
